Cocoa for Chocolate Cake
This is going to be a quick post as I'm traveling for the Super Bowl! But I wanted to share my extra rich chocolate cake recipe with you. This is a great base for so many flavours! You can add orange zest and orange extract for a chocolate orange vibe, can fold in salted caramel for a chocolate caramel cupcake, add white chocolate chips for a marbled chocolate effect or even put a marshmallow on the top of the cupcakes and grill for a s'mores cupcake.
I love this recipe for my larger cakes because the cocoa powder gives this some strength in structure which makes building and carving a lot easier. If your cakes seem to fall apart when you're icing them or stacking them then this recipe should help you out.
Feeling like something smaller? I used this recipe for my Super Bowl cupcakes (pictured below) both for regular sized cupcakes and mini and it is still a moist (cringe!) cake baked in smaller sizes too.

Cocoa for Chocolate Cake
INSTRUCTIONS
- Sift & whisk - Sift your flour, baking soda, baking powder, and salt into a bowl and whisk together.
- Boil your two cups of water and mix with the cocoa until cocoa is dissolved. Set aside and allow to cool slightly.
- Cream butter and sugar together until it is really light and fluffy. This could take up to 10 minutes but wait until it has changed colour to a pale yellow/cream and is very fluffy.
- Add your eggs to the mixture two at a time and keep mixing until fully incorporated.
- Add the sifted ingredients and the cocoa mixture in alternating batches beginning with the dry ingredients.
- Pour batter into cupcake tins or lined cake tins and bake at /350F for 50 minutes if using 7 inch tins or 18-20 minutes for regular sized cupcakes. Test using a skewer to see if the cakes are done.
